HOMEMADE VANILLA EXTRACT
Description
You can make your own with vodka or rum, but we like our whiskey. Bourbon's natural sweetness pairs really well with vanilla. If you can find it, use Bourbon vanilla beans. This simply means the beans came from Madagascar (originally came from an area known as the Isle of Bourbon and nothing to do with the whiskey except both named after French Bourbon royal family). Bourbon vanilla beans have higher vanillin content so they add more flavor to the extract. We use Mexican here which is second behind Madagascar in vanillin content.
Methods/steps
Slit the beans so the whiskey can come in contact with the goodness inside.
Put the beans and whiskey into a larger container or drink a couple shots of the whiskey so the beans will fit inside.
Set aside for at least a month.
May refill a little whiskey as you use the extract to continue pulling flavor from the beans.

Additional Tips
We scrape the insides of these whiskey soaked beans for our vanilla ice cream.
