CELERY FAIRY
Description

Aleš Olasz came up with this for a guest bartending/absinthe class I did with him at Montgomery Place, a cozy little joint in London's Nottinghill neighborhood.  We tweaked it together and won over many "I don't drink vodka or absinthe" folks.

Ingredients

Makes

1 ½ ounces vodka
½ ounce absinthe
½ ounce Floc de Gascogne
2-3 inches of celery stalk, cut in small pieces

Methods/steps

Muddle celery.
Pour in liquid.
Add ice. 
Stir. 
Fine strain into chilled cocktail glass. 
Lemon peel twisted, rubbed along rim, and dropped into glass.
